N690Co - high-carbon stainless knife steel with added cobalt for structural uniformity. One of the best tool steels in the world today. Coal (C) 1.07% i cobalt (Co) 1.65% make it a very hard steel, hardened in the range of 58-59 HRC. At this level of hardness, it provides good cutting edge retention and excellent wear resistance. so the blades stay sharp longer.
