Thanks to the included guide we can precisely select the sharpening angle, depending on the type and purpose of the knife, which will each time will ensure a perfect sharp edge and a smooth cut every time. .

Operation of the system

In order to start sharpening the knife, we should start by securing the blade in the aluminum clamp, which prevents the knife from moving during edge sharpening. The clamp has holes, which we will later use to choose the appropriate sharpening angle. The clamp is double-sided and equipped with 4 holes (4 different angles) on each side, so there is no need to remove the knife to sharpen the other edge.

Once you have secured the knife in the jaws of the clamp with screws, you need to connect the guide with the appropriate grinding stone and choose the angle that best suits the type and purpose of the blade.

Adjusting the sharpening angle is extremely easy. All you need to do is place the guide in the pre-cut holes clamp, where each hole has an angle assigned to it (17°, 20°, 25° and 30°).

They will be used for sharpening, repairing a damaged blade, or smoothing and grinding the cutting surface. Each sharpener is mounted in a polymer housing and has a different color to quickly and easily identify the gradation you need.

Arkansas stone, which originated in North America, is characterized by very fine grains, high hardness and density, making it a valued raw material from which knife whetstones are made.

Sharpening on the Arkansas stone is slower and time-consuming, but the cutting edge is smoother and retains sharpness much longer.

Also included is Lansky Nathans Honing oil, which increases the quality and effect of sharpening. Stones coated with a few drops of oil during sharpening maintain proper moisture content, which prolongs their life and makes it easier to achieve professional sharpness.

Stones:

  • Lansky Soft Stone S0300 with a gradation of 200-350 is used to repair the blade and bring out a new cutting edge.

  • Lansky Hard Stone Arkansas S0650 with a gradation of 650 is used to sharpen slightly dulled cutting edges, give working sharpness and pre-polish edges.
  • Lansky Black Hard Arkansas SOBHA with a gradation of 1200-1400 is used for final smoothing and polishing of the blade, allowing you to achieve the sharpness of the proverbial razor.

In order to achieve even greater stability of the sharpening set, the manufacturer recommends getting a vise for fixing it to a table or countertop. For the set you can additionally buy a cleaning block Lansky Eraser Block LERAS, which allows you to easily and quickly get rid of the tarnish of steel from ceramic stones, deposited during sharpening.
